The first tortilla I ever ate was in Antigua, Guatemala and it was a corn tortilla. I stayed in Guatemala for a month, learning Spanish and ate tortillas almost every day. Each and every one was a corn tortilla.
That first impression has shaped my world view. I always chose corn tortillas over flour, if given the choice. Alas, the choice isn’t always given. If you are a fan of flour tortillas, let me tell you some reason why you should switch to corn.
First, corn tortillas came first. Mesoamericans ate corn tortillas over a thousand years ago. Flour tortillas are an innovation the Spanish devised because they thought corn wasn’t a fit product for humans. Although flour tortillas roll better for burritos, corn tortillas are more authentic.
According to Prevention.com, the online version of Prevention Magazine, corn tortillas are better for you. Made only with corn and water, they have fewer calories, more fiber, and less salt than flour tortillas. It might surprise you to know that, despite corn’s sweetness, flour tortillas have more sugar.
Spring Break started for me yesterday and one of my gals is to make my own corn tortillas. If it goes well, I might have another slice of tortillas.
I have never tried the corn tortillas; it has always been flour. After reading this I will have to try the corn and maybe just switch.
We eat a lot of tortillas in our house. My husband grew up with homemade corn tortillas and he will rarely touch a flour tortilla. I, on the other hand, always preferred flour tortillas until I learned recently how much salt they have. We have stopped buying the flour variety. I admire your goal of making your own and look forward to hearing what you learn.
I am definitely a flour girl who has never really looked into corn tortillas until last summer. I went to visit my boyfriends family and had one of the best corn tortillas ever. After reading your slice…I may begin to mix it up more than I have in the past.

I’ve tried the corn so many times because I know they are better, but I just can’t enjoy them.
For me it depends on how I am eating them. Flour tortillas are for sandwich wraps, breakfast burritos or tacos. Corn are for enchiladas, or chicken tacos. It took me years to find corn tortillas in Ontario!
It depends. Flour for burritos or saucy things, corn for tacos.
My household always faces the pancake vs. waffle debate… Funny how we prefer certain flavors and textures over others!
Okay, you’ve convinced me to give them a try. I do prefer flour. How do they do for quesadillas?
A former Mexican-American teaching colleague’s mother aways made theirs with corn tortillas and Monterey jack cheese. Apparently in the last few years she’s used cheddar – but still swears by corn tortillas.
I will try it. 🙂 but I do love my quesadillas with flour.
